Healthy Aval Pottukadala Laddu (Flattened Rice & Roasted Gram Sweet Balls)

​A quick, healthy, and delicious traditional no-cook sweet snack made with roasted flattened rice (aval), roasted gram, fresh coconut, and sweetened with jaggery syrup. Packed with nutrition and flavored with ghee and sesame seeds, this is a perfect after-school treat that can be prepared in minutes.

Ingredients
  

  • ​Roasted Gram Pottukadala: 1 cup
  • ​Flattened Rice Aval / Poha - Matta or regular: 1 cup
  • ​White Sesame Seeds Ellu: 1 tablespoon
  • ​Fresh Grated Coconut: ¼ cup
  • ​Jaggery Syrup: Approx. ¾ cup prepared using jaggery melted in water, cooled
  • ​Ghee: 1 to 2 tablespoons for rich flavor and binding

Method
 

  1. ​Roast Pottukadala: Heat a pan on medium heat and dry roast 1 cup of roasted gram (pottukadala) without adding any oil or ghee until its raw smell disappears. Transfer to a plate.
  2. ​Warm the Aval: In the same pan, add 1 cup of flattened rice (aval) and lightly warm it up for a minute so it becomes crisp enough to grind easily (do not change color).
  3. ​Roast Sesame Seeds: Lightly dry roast 1 tablespoon of white sesame seeds in the pan just until the raw aroma goes away, making sure not to brown them too much.
  4. ​Grind to Powder: Once cooled, transfer the roasted pottukadala and aval into a mixer jar and grind them together into a fine powder. Transfer this powder to a mixing bowl.
  5. ​Add Coconut and Sesame: Add ¼ cup of fresh grated coconut and the roasted white sesame seeds into the flour mixture. Mix gently.
  6. ​Add Ghee and Jaggery Syrup: Pour in 1-2 tablespoons of ghee and gradually add the cooled jaggery syrup (about ¾ cup or as needed) little by little, mixing thoroughly.
  7. ​Shape the Laddus: Take small portions of the mixture and press/roll them firmly between your palms to shape them into smooth, round balls (laddus).
  8. ​Serve: Your healthy and tasty Aval Pottukadala Laddus are ready to serve or store!

Notes

​Jaggery Syrup Tip: Make sure the jaggery syrup is completely cooled down before mixing it into the flour.
