Sweet Rice Balls (Ariyunda / Naadan Snack)

Ingredients
  

  • ​Raw Rice Pacharisi – 2 Cups
  • ​Fresh Grated Coconut – 2 Cups
  • ​Grated Jaggery – 250 gms
  • ​Cardamom Powder – 1/2 tsp

  • ​Mixer Grinder
  • Mixing Bowl

Method
 

  1. Roast the Rice: Heat a heavy-bottomed pan and dry roast the cleaned raw rice on a medium flame until it turns slightly golden and pops up. Turn off the heat and let it cool.
  2. ​Grind the Rice: Once cooled, transfer the roasted rice to a mixer grinder and grind it into a coarse powder (do not make it too fine).
  3. ​Mix Coconut and Jaggery: In a large mixing bowl, combine the grated coconut and grated jaggery, and mash/rub them together well with your hands.
  4. ​Combine All Ingredients: Add the ground rice powder and cardamom powder to the coconut-jaggery mixture. Mix everything thoroughly with your hands (no water is needed).
  5. ​Shape the Balls: Take small portions of the prepared mixture and press/roll them tightly into round balls. Delicious traditional Ariyunda is ready!

Notes

Roast the rice on a medium-low flame and stir continuously to avoid burning.
​Adjust the amount of jaggery according to your preferred sweetness level.
​Store in an airtight container to keep it fresh for up to two weeks.
