Crispy Triangle Snack Recipe

Ingredients
  

  • All-purpose flour Maida / Wheat flour - 1.5 cups
  • ​Oil or Ghee - 2 tbsp for dough
  • ​Carom seeds Ajwain or Cumin seeds - 1/2 tsp
  • ​Salt - to taste
  • ​Water - as needed to knead the dough
  • ​Oil - for deep frying
  • ​Potatoes / Filling ingredients as shown in the video - 1 cup (boiled and mashed)
  • ​Green chilies and ginger paste - 1 tsp
  • ​Turmeric powder - 1/4 tsp
  • ​Chili powder - 1/2 tsp
  • ​Garam masala - 1/2 tsp
  • ​Coriander leaves - chopped

  • ​Frying Pan / Kadai
  • ​Skimmer Spoon

Method
 

  1. ​In a large mixing bowl, combine the flour, salt, carom seeds, and 2 tablespoons of oil or ghee. Mix well until it resembles breadcrumbs.
  2. ​Gradually add water and knead into a smooth, firm dough. Cover and let it rest for 15-20 minutes.
  3. ​For the filling, mix the mashed potatoes with green chili-ginger paste, turmeric powder, chili powder, garam masala, salt, and coriander leaves.
  4. ​Divide the rested dough into equal-sized balls. Roll out each ball into a thin, large circle.
  5. ​Cut the rolled dough into required shapes (triangles or strips to fold into a triangle shape), place a small portion of the filling in the center, and fold it securely into a neat triangle shape, sealing the edges with a little water or flour paste.
  6. ​Heat oil in a kadai on medium-low flame. Carefully drop the prepared triangles into the hot oil.
  7. ​Fry them on medium-low heat, turning occasionally, until they turn golden brown and crispy on all sides.
  8. ​Remove them using a skimmer spoon and drain excess oil on a paper towel. Serve hot with tea or chutney.

Notes

Notes:
​Fry the snacks on medium-low flame to ensure they get crispy evenly from inside and outside.
​Ensure the edges of the triangles are sealed properly so the filling does not leak while frying.
