- In a bowl, combine 1/2 cup of hot milk and 1/4 cup of unsalted butter, mix well, and cover to let the heat reduce slightly.
- In a mixer jar, add 2 eggs, 1/2 to 3/4 cup of sugar, and 1/2 teaspoon vanilla essence. Blend well until smooth without using any electric beater.
- Sift together 1 cup of maida, 1/2 teaspoon baking powder, and a pinch of salt using a strainer.
- Gently fold the dry ingredients into the egg-sugar mixture using the cut-and-fold method.
- Gradually pour in the warm milk-butter mixture and mix into a slightly loose batter. Do not make it too thick.
- Immediately pour the batter into a greased and lined baking tray.
- Place it in a preheated vessel and bake on low-to-medium heat for about 40 to 45 minutes.
- Once baked and cooled completely, slice and enjoy your soft, bakery-style tea cake!
