- Roast Pottukadala: Heat a pan on medium heat and dry roast 1 cup of roasted gram (pottukadala) without adding any oil or ghee until its raw smell disappears. Transfer to a plate.
- Warm the Aval: In the same pan, add 1 cup of flattened rice (aval) and lightly warm it up for a minute so it becomes crisp enough to grind easily (do not change color).
- Roast Sesame Seeds: Lightly dry roast 1 tablespoon of white sesame seeds in the pan just until the raw aroma goes away, making sure not to brown them too much.
- Grind to Powder: Once cooled, transfer the roasted pottukadala and aval into a mixer jar and grind them together into a fine powder. Transfer this powder to a mixing bowl.
- Add Coconut and Sesame: Add ¼ cup of fresh grated coconut and the roasted white sesame seeds into the flour mixture. Mix gently.
- Add Ghee and Jaggery Syrup: Pour in 1-2 tablespoons of ghee and gradually add the cooled jaggery syrup (about ¾ cup or as needed) little by little, mixing thoroughly.
- Shape the Laddus: Take small portions of the mixture and press/roll them firmly between your palms to shape them into smooth, round balls (laddus).
- Serve: Your healthy and tasty Aval Pottukadala Laddus are ready to serve or store!

Jaggery Syrup Tip: Make sure the jaggery syrup is completely cooled down before mixing it into the flour.
