- Roast the Rice: Heat a heavy-bottomed pan and dry roast the cleaned raw rice on a medium flame until it turns slightly golden and pops up. Turn off the heat and let it cool.
- Grind the Rice: Once cooled, transfer the roasted rice to a mixer grinder and grind it into a coarse powder (do not make it too fine).
- Mix Coconut and Jaggery: In a large mixing bowl, combine the grated coconut and grated jaggery, and mash/rub them together well with your hands.
- Combine All Ingredients: Add the ground rice powder and cardamom powder to the coconut-jaggery mixture. Mix everything thoroughly with your hands (no water is needed).
- Shape the Balls: Take small portions of the prepared mixture and press/roll them tightly into round balls. Delicious traditional Ariyunda is ready!
