
🍮 Quick & Healthy Roasted Gram Sweet Snack (Pottukadalai Laddu/Halwa Barfi)

Method
- Roast Fried Gram: Take 1 cup of fried gram (pottukadalai) in a pan and roast it lightly on low flame until it gets a nice aroma and the raw smell goes completely. Turn off the heat and let it cool slightly.
- Powder the Gram: Transfer the roasted fried gram into a mixer jar and grind it into a very fine powder without any lumps or texture.
- Make Jaggery Syrup: In another pan, add 1 cup of powdered jaggery and 1 cup of water. Let it boil until the jaggery completely dissolves and comes to a simple boil (no need for single-thread consistency).
- Mix and Cook: Pour the prepared jaggery syrup directly into the powdered fried gram (off the flame initially) and mix well to avoid lumps. Once smoothly combined, place the pan on low-to-medium heat.
- Add Ghee & Thicken: Add 1 tablespoon of ghee and stir continuously. Add 1 more tablespoon of ghee as it cooks and keep stirring until the mixture thickens and leaves the sides of the pan (takes about 5 minutes).
- Shape: Turn off the heat. Transfer the warm mixture to a greased plate or mold and shape them nicely while warm into small, beautiful shapes or balls without any cracks. Enjoy this melt-in-the-mouth healthy treat!

Notes
Roasting: Lightly roast the fried gram to remove any moisture and enhance the aroma before powdering.
Fine Powder: Grind the fried gram into a very fine powder so the final texture of the snack remains smooth and melts easily in the mouth.
No Syrup Stage Needed: The jaggery only needs to dissolve and come to a boil; making a thick sugar syrup is not required for this recipe.
Shaping: Shape the mixture while it is still warm so you can easily mold it without any cracks.
