Crispy & Tasty Parippu Vada: The Ultimate Nostalgic Tea-Time Snack

Whether in Kerala or anywhere across India, stepping into a neighborhood tea stall always brings the comforting aroma of freshly fried savory snacks like Crispy & Tasty Parippu Vada. Among them, the Crispy & Tasty Parippu Vada holds a legendary status. It is a nostalgic snack that almost every Malayali has grown up eating, making it an inseparable part of our childhood memories and evening routines.
Traditionally, authentic tea shops often prefer using green peas dal to achieve a classic texture, but preparing it with Bengal gram (chana dal) yields an equally incredible and mouth-watering taste. Pair this piping-hot Crispy and Tasty Parippu Vada with a simple glass of strong black tea (kattan chaya), and you have an unbeatable combination that instantly takes you back in time. The Magic of Homemade Crunch: Traditional Roots & Modern Ease
In the old days, grandmothers and mothers used traditional grinding stones (ammi kallu) to prepare the batter for these vadas, which lent a uniquely rustic flavor that modern mixers can rarely replicate. However, today’s fast-paced lifestyle calls for smart and quick methods without compromising on taste. This recipe brings you the best of both worlds by showing an effortless way to mix everything together while keeping the authentic essence alive.
One of the greatest advantages of making this Crispy & Tasty Parippu Vada at home is how remarkably non-greasy it turns out when fried correctly on medium heat. Unlike heavy, oil-soaked street snacks, this homemade version lets you enjoy every single bite guilt-free. The combination of coarse chana dal, crunchy whole lentils kept aside for texture, fragrant curry leaves, and a hint of spice creates a masterpiece that is crispy on the outside and wonderfully soft on the inside.

🫓 Crispy & Tasty Parippu Vada (Tea-Shop Style Chana Dal Fritters)
Ingredients
- Chana dal Bengal gram - 2 cups (soaked for 2 to 3 hours and drained completely)
- Onion - 1 chopped, or use small shallots
- Green chillies - 2-3 chopped
- Ginger - A small piece chopped
- Curry leaves - A sprig
- Dry red chillies - 2 deseeded and chopped, adjust for spice
- Salt - As needed
- Asafoetida Kayam powder - A pinch
- Oil - For deep frying
Method
- oak and Drain: Soak 2 cups of chana dal for 2 to 3 hours, then drain all the water completely.
- Reserve some Dal: From the drained dal, set aside 4 tablespoons of whole dal separately to mix later for a nice crunch.
- Coarse Grind: Transfer the remaining dal into a mixer jar along with chopped onion, green chillies, ginger, curry leaves, and deseeded dry red chillies. Add salt as needed. Pulse it coarsely—do not make a smooth paste.
- Mix Everything: Transfer the coarse mixture to a bowl. Add the reserved 4 tablespoons of whole chana dal and a pinch of asafoetida (kayam powder). Mix everything well together.
- Shape the Vada: Take small portions of the mixture, roll them into balls, flatten them slightly on your palm to form traditional vada shapes (do not make them too thick).
- Fry: Heat oil well in a pan. Gently drop the vadas into the hot oil and fry on a low-to-medium flame. Fry them slowly until they turn to a nice golden brown color on both sides, ensuring they cook well inside without getting too hard. Remove from oil and serve hot with tea!
