Ingredients
  

  • ​Raw Rice Pacharisi: 1.5 cups (soaked for a few hours)
  • ​Grated Coconut: ½ cup
  • ​Cooked Rice: ½ cup for extra softness
  • ​Sugar or Jaggery: As required depending on whether you prefer it sweet or savoury
  • ​Yeast or Baking Soda: A small pinch for fermentation/softness if applicable
  • ​Salt: As required
  • ​Water: As needed for grinding

  • ​Steamer / Idli cooker or appam pan

Method
 

  1. ​Soak the Rice: Wash and soak 1.5 cups of raw rice in water for at least 4 to 5 hours.
  2. ​Grind the Batter: Drain the soaked raw rice and transfer it to a mixer grinder. Add ½ cup of grated coconut, ½ cup of cooked rice, and just enough water. Grind everything together into a smooth, slightly coarse batter.
  3. ​Add Flavorings & Ferment: Transfer the batter to a large bowl. Add salt (and sugar/jaggery if making a sweet version), along with a pinch of yeast or baking soda if required for fermentation. Mix well and let it rest/ferment for a few hours.
  4. ​Prepare the Steamer: Bring water to a boil in a steamer or idli cooker. Grease a cake tin or steaming plate.
  5. ​Steam the Breakfast: Pour the prepared batter into the greased plate/tin. Place it inside the steamer, cover with a lid, and steam on medium-high heat for about 15 to 20 minutes until fully cooked.
  6. ​Cool and Slice: Once done, remove it from the steamer, let it cool down slightly, slice it into desired shapes, and serve hot!
