Ingredients

  • Beetroot - 1 Medium sliced/grated as preferred
  • Garlic - 20 cloves
  • Ginger - 50 gm
  • Mustard seeds - 1 tsp
  • Fenugreek Powder ഉലുവ പൊടി - 1/4 tsp
  • Cumin Seeds ജീരകം - 1/2 tsp
  • Asafoetida Powder കായപ്പൊടി - 1/4 tsp
  • Salt - As required
  • Kashmiri Chilli Powder - 3 or 4 Tbsp
  • Vinegar - 1/4 Cup
  • Sugar - 1 Tbsp

Method

  1. Clean and peel the medium-sized beetroot. Chop or grate the beetroot, chop the ginger (50 gm), and peel the garlic cloves (20 cloves).
  2. Sauté the Spices: Heat a pan (without adding oil, as this is a zero-oil recipe) and splutter the mustard seeds and cumin seeds.
  3. Add Aromatics: Add the chopped ginger and garlic cloves into the pan and sauté until they turn lightly golden and the raw smell leaves.
  4. Add Powders: Lower the flame and add the Kashmiri chilli powder, fenugreek powder, and asafoetida powder. Sauté well for a few seconds without burning.
  5. Cook the Beetroot: Add the prepared beetroot pieces along with the required amount of salt into the pan.
  6. Add Vinegar & Sweetness: Pour in 1/4 cup of vinegar and add 1 tablespoon of sugar (or dates) to balance the flavors. Mix everything thoroughly.
  7. Simmer: Cover and cook on low-medium flame until the beetroot is tender and well-combined with all the spices and vinegar.
  8. Store: Allow it to cool completely before transferring to a clean, dry glass jar. Enjoy your healthy, oil-free Malabar-style beetroot pickle!

Notes

  • Mom's Special Touch: This authentic recipe comes straight from my mother's kitchen. Growing up in Malabar, this was a staple in our lunch boxes, and my college friends would always fight to grab a taste of it!
  • Zero Oil Highlight: Since this pickle is made with almost zero oil, it is very light on the stomach and a super healthy option for daily meals.
  • Best Pairings: It pairs exceptionally well with rich dishes like Malabar Biryani and fits right into a traditional Kerala Sadya spread.
