- Make the Rava Base: Heat a pan and dry roast 1 cup of unroasted semolina (rava) lightly. Pour in 2 cups of milk and add a pinch of salt, stirring continuously. Cook until the milk is completely absorbed and the mixture thickens into a soft dough consistency. Turn off the heat and let it cool slightly. While still warm, knead the dough well until smooth and perfect.
- Prepare the Filling: In a bowl, combine freshly grated coconut, 2 tablespoons of milk powder, and 1 tablespoon of sugar. Rub and mix it well with your hands so it forms a slightly sticky filling. (Shaping small portions of this filling beforehand makes wrapping easier).
- Roll and Shape: Grease a rolling board or counter top with a little oil. Take half of the rava dough, place it on the board, and roll it out with a rolling pin (keep it slightly thick, not too thin). Place small portions of the coconut filling onto the sheet, fold the dough over the filling, and use a sharp-edged glass or small bowl to cut out neat crescent or round shapes. Carefully seal the edges tightly so the filling doesn't leak out during frying. (Note: You can also make some plain pieces without filling, which kids especially love!)
- Prepare Sugar Syrup: In a separate pan, combine 1 cup of sugar and 1 cup of water. Heat until the sugar completely dissolves into a thin syrup (it doesn't need to reach a single-thread consistency), then turn off the heat.
- Fry the Snacks: Heat oil in a deep frying pan. Carefully drop the prepared snacks into medium-hot oil and deep fry on medium flame, flipping occasionally, until they turn a nice golden-brown color.
- Soak in Syrup: Remove the fried snacks using a slotted spoon, draining excess oil, and immediately drop them into the warm sugar syrup. Let them soak, flipping them over occasionally so the syrup absorbs well into the inside.
- Transfer to a serving plate, optionally drizzle a little remaining syrup on top for a glossy finish, and serve warm or at room temperature!

Notes
Ensure the sugar syrup is kept warm when adding the freshly fried snacks so they absorb the syrup properly.
Kneading the rava dough while it is still warm is key to getting a smooth, crack-free texture.
Both filled (coconut) and unfilled versions taste amazing—unfilled pieces are often a huge hit with kids!
