​Instant Carrot Halwa (Different Style Carrot Halwa)

​A unique, quick, and mouth-watering South Indian sweet made with fresh carrots, thick coconut milk, maida (or cornflour), sugar, and ghee. This delicious instant carrot halwa can be prepared in just 15 minutes with a rich texture and natural sweetness, making it a perfect festive treat or dessert for kids and family.

Ingredients
  

  • ​Carrots: 3 Medium Sized peeled and washed
  • ​Cardamom Powder: 1 tsp powdered with sugar
  • ​Thick Coconut Milk: 1 Cup prepared using thick coconut milk or instant coconut milk powder
  • ​Maida All-Purpose Flour: 4 tbsp (Can replace with cornflour or a mix of 2 tbsp maida + 2 tbsp cornflour)
  • ​Water: As required for mixing the flour
  • ​Ghee: 3 tbsp divided usage
  • ​Sugar: ½ Cup adjust according to sweetness preference
  • ​Salt: A small pinch to balance sweetness
  • ​Pista / Almonds: Chopped for garnishing

Equipment

  • ​Blender / Mixer grinder
  • ​Heavy-bottomed pan or Non-stick kadai
  • ​Spatula
  • ​Greased tray or plate for setting

Method
 

  1. Prepare Carrot Puree: Grate the peeled and washed medium-sized carrots. Transfer the grated carrots into a blender jar, add 1 teaspoon of cardamom powder and 1 cup of thick coconut milk. Blend into a smooth paste without any small chunks to ensure a perfect halwa texture.
  2. ​Prepare Flour Slurry: In a small bowl, mix 4 tablespoons of maida with a little water into a smooth, lump-free, milk-like consistency.
  3. ​Sauté Carrots: Heat 2 tablespoons of ghee in a non-stick pan over medium heat. Add the blended carrot-coconut mixture and sauté for 2 to 3 minutes without changing its natural color.
  4. ​Add Sugar: Add ½ cup of sugar to the pan and stir continuously until the sugar melts completely and blends well with the carrots.
  5. ​Incorporate Flour Slurry: Lower the flame to low-medium. Pour in the prepared maida slurry while stirring continuously to avoid lump formation. Once well combined, bring the flame back to medium.
  6. ​Cook and Thicken: Cook on medium flame, stirring occasionally. Add chopped almonds or pistachios and 1 more tablespoon of ghee (total 3 tbsp used). Add a tiny pinch of salt to balance the sweetness. Continue cooking for about 10 minutes until the mixture thickens and leaves the sides of the pan.
  7. ​Set and Serve: Turn off the stove and transfer the hot halwa into a greased tray. Level it nicely using a greased spoon, garnish with chopped pistachios, and press lightly. Allow it to set and cool completely for about 2 hours, then slice and serve!

​Blending Tip: Ensure the carrots are blended completely smooth with coconut milk so no bits remain.
​Ghee and Sugar: Only 3 tablespoons of ghee are needed for this recipe, making it light yet rich. Adjust sugar based on personal preference.
