Prepare the Grapes: Wash the green grapes thoroughly, drain all the water completely, and keep them clean and dry.
Heat the Oil: Heat gingelly oil in a pan over medium heat.
Sauté Spices & Aromatics: Splutter mustard seeds in the hot oil. Then, add chopped ginger, garlic, green chilies, and fresh curry leaves. Sauté them well until the raw smell goes away and the aroma comes out.
Add Powders: Lower the flame and add turmeric powder, Kashmiri chili powder, and asafoetida powder. Sauté gently in the oil for a few seconds without burning.
Add Grapes: Add the cleaned green grapes into the pan and mix well with the masala.
Add Vinegar & Salt: Pour in the vinegar and add required salt. Mix everything thoroughly.
Simmer: Allow it to cook for a few minutes on low flame so the grapes absorb all the flavors and spices properly.
Final Touch: Add a pinch of roasted fenugreek powder (uluva podi) for that traditional pickle flavor, mix well, and switch off the stove.
Serve: Once cooled down completely, store it in a clean glass jar. Enjoy this delicious and tangy green grapes pickle with hot rice!
