Easy Evening Snack

  • ​All-purpose flour Maida: 1 cup (You can also substitute it with whole wheat flour)
  • ​Salt: 1/4 tsp
  • ​Black sesame seeds: 1 tsp
  • ​Water: As required to knead the dough
  • ​Cornflour or Rice flour: As needed for creating layers
  • ​Sugar: 3/4 cup for sugar syrup
  • ​Water: 1/4 cup for sugar syrup
  • ​Oil: For frying

Method

  2. ​Preparing the Dough:
  3. ​In a bowl, add 1 cup of all-purpose flour, 1/4 tsp of salt, and 1 tsp of black sesame seeds.
  4. ​Gradually add water and knead it into a soft dough, similar to chapati dough.
  5. ​Rolling out the Dough:
  6. ​Divide the dough into a couple of portions. Take one portion and place it on a clean counter top or rolling board dusted with a little flour.
  7. ​Roll it out as thin as possible. The thinner you roll it, the crisper your snack will turn out.
  8. ​Creating the Layers:
  9. ​Dust a little cornflour or rice flour evenly over the rolled-out dough. (This helps the layers separate nicely while frying).
  10. ​Fold the dough neatly, give it a quick gentle roll with the rolling pin to flatten it slightly, and then cut it into small pieces. You can already see the nice layers inside.
  11. ​Frying the Snack:
  12. ​Heat oil in a pan. Once the oil is hot, drop the pieces in. They won't stick to each other, so you can add a good amount at once.
  13. ​Important Tip: Fry them on low to medium flame. If the flame is too high, the outer layer will brown too quickly while the inside remains uncooked and soft.
  14. ​Fry slowly until they turn a nice light golden brown and become completely crisp. Even though they are fried, they absorb very little oil and stay dry.
  15. ​Sugar Coating (Optional):
  16. ​While these taste great on their own, you can add a sweet coating if you prefer. In a pan, combine 3/4 cup of sugar and 1/4 cup of water. Boil it until it reaches a one-string consistency.
  17. ​Add the fried snacks into the sugar syrup and mix well so the syrup coats all the layers. Turn off the heat and let it cool. As it cools, the sugar will crystallize, giving it a frosty, snow-like sweet coating.
